Alice Waters granted highest recognition from Obama; she deserves it! Inspired by her and the chefs who followed her, I sought out ‘our Alice Waters’ in Quebec, the local food pioneer Anne Desjardins, to go work at L’Eau à la Bouche in Ste-Adele in 2015. A life changing experience –in food & cooking, and in meeting my François des Bois, a pioneer in his own right with the wild stuff.. To think of all we have done since, the cooks and customers who have been inspired and learnt from us, and all the parallel stories everywhere..
